Not All Good Meals are Pretty

So on this uninspiring cold Wednesday, I was going through the pantry seeing what I had to cook with. Found a rather large sweet potato and decided to make a simple dish of roasted sweet potato and Italian sausage. Not a huge time commitment and I could just use one dish to cook it in, so a win for me.

The combination of sweet potato and sausage was really good but unfortunately the dish, she was ugly 😂. Enjoy this simple Wednesday recipe ; there will not be a final picture.


Pre-Heat Oven to 400F


Recipe:

1 lbs Italian Sausage

1 Large Sweet Potato

3 Cloves Garlic Diced

1/3 Cup Parmesan Cheese Finely Grated

1 Tbsp Olive Oil

1/4 tsp Dried Rosemary

Salt

Red Pepper Flakes

1/4 tsp Herbs de Provence


  • Place Coated Cast Iron Pan in oven while it temperature preheats.

  • Dice Large Sweet Potatoe into small cubes.

  • Form

  • Once temperature reaches 400F, take pan out of the oven, add olive oil, diced potatoes, and lightly salt. Stir and make sure pieces are coated in olive oil. Place in oven and set timer for 12 min.

  • While potatoes are cooking dice garlic.

  • Once 12 mins are up, remove pan to a stove top or counter, stir potatoes and place in sausage balls. Allow to cook 15 min. Stir pan once again during this time.

  • Remove pan and add diced garlic, stir, return to oven for two minutes. (make sure sausage is cooked all the way through and potatoes are tender, if not cook longer)

  • Remove pan once more, sprinkle on Parmesan Cheese, return pan to oven and turn oven to broil. Broil until dish is browned to your liking.

  • Remove and season with red pepper flakes, Herbs de Provence, and salt to taste.
