It’s Hot as Hell and I Still Want Soup

So it might be as hot as Satin’s Balls this weekend but this soups is going to be epic and I think you will like it.
Small heirloom tomato
2 leeks chopped
1 Medium to Large Red Onion
5 cloves garlic while
48 ounces chicken bone broth - I used Spice Chicken from Zoup.
3 Small Russet Potatoes Diced
1lbs Italian Sauage
Olive Oil
Herbes de Provence Olive Oil
Hand Stick Blender
Sauté Leeks, Onion in 2 Tablespoons Olive Oil and 2 Tablespoond Herbe de Provence for 5-7 min over medium heat.
Add chopped tomatoe and garlic bulbs. Cook another 2-3 min.
Add chicken broth bring to a boil and let boil with a vented lid for 5 min.
Then carefully use hand blender to purée veg mix in broth.
Add diced potatoes and boil for 10 min. Cook sausage while potatoes are boiling.
Add cooked Italian Sausage. My preference is to add half the sausage oil as well 😬
Let combine over low heat for another 5 min.
Turn off heat and serve or let sits for 10-20 min for more flavor combo.
