Nothing Better than Winging It …

Nothing better than looking at what you have in the fridge and pantry to create something without running to the store for supplies. I bought these Seggiano Noodles months ago planning to stuff them and never got around to it but tonight they looked delicious!

This is a slight variation of the Kansas City Carbonara Recipe with the addition of fresh diced shallots and green onions. I didn't want this sauce to be as thick so I only used on egg yolk to combine the cheese and bacon grease. I also added a tablespoon and a half of roasted garlic butter for additional flavor. salt and pepper to taste. Have fun improvising on the basics my friends 💗
