Winter Kale Soup

I was looking at the garden this afternoon and saw that I still have two kale plants still hanging on in January! So, we are making Winter Kale Soup 💕

Ingredients:

  • 2 Liters Chicken Broth

  • 1 Cup Whole Milk

  • 1.25 lbs of Italian Sausage ( I use medium heat )

  • 1 Medium Yellow Onion - Diced

  • 8 - 10 stalks medium size Kale - Chopped

  • 1 - 1.25 lbs Fingerling Potatoes sliced in 1/2" slices

  • 4-5 Sprigs of Fresh Thyme

  • 4 Cloves of Garlic - Menced

  • 1 tsp Garlic Powder

  • 1 tsp Salt (or to taste)

  • 1.5 tsp White Pepper (or to taste)

  • 1 TBSP Butter


  1. In a large stalk pot cook sausage at Medium Heat and break apart into small chunks.

  2. Once sausage is cooked, remove from pot and add butter. Once butter has melted, add diced Onion and Salt. Cook until onions are translucent white (3-5 min). Then add menced Garlic, stir and let cook 1 min.

  3. Add all the chicken broth to the Onions and Garlic. Turn heat to Hi to begin boiling the broth, onions and garlic.

  4. Add sliced potatoes, White Pepper, Garlic Powder, and Sprigs of Thyme. Boil until potatoes are tender, approximately 20 min.

  5. Once potatoes are tender add Sausage back into the pot and stir. Turn heat off but leave the pot on the stove.

  6. Add 1 Cup of Milk and Chopped Kale. Stir and let sit for 5 minutes, making sure to stir so the milk doesn't curdle.

  7. From here you can serve or remove from hot burner and put a lid on the pot to eat later. My pot usually stays warm for a few hours once removed from heat with lids to eat at your convenience. -- Enjoy 🥬
